Salad
1 head of lettuce, torn
6 cups dark leafy greens of choice (we used Spinach + Kale)
3 cups arugula
Handful of mint (de-stemmed)
1 cup micro greens
1 whole avocado, cubed
1 large beet, peeled + shredded
1 large cucumber, peeled + seeded + cubed
1/2 cup chopped Macadamia Nuts, pan toasted
6 tbsp Super Shroom Drip
Lemon-Ginger Dressing
Juice of one lemon
1 inch knob ginger
3 tbsp Apple Cider Vinegar
½ cup olive oil
6 tbsp Tahini C
2 tbsp Raw, local honey (optional)
¼ tsp sea salt
Water to desired consistency
Massage your dark leafy greens in 2-3 tbsp olive oil and a little bit of pink salt. Let sit for a few minutes.
Toss with arugula, mint, and lettuce.
Add your avocado cubes, beet shreds, and cucumber.
Top with toasted Macadamia Nuts. Add ¼- ½ cup of lemon-ginger dressing and toss to combine all ingredients well. Lastly, Shroom Drip your servings, top with micro-greens and dig in like you mean it.
