1 head purple cauliflower 4 tbsp ghee, melted 2 tbsp sesame oil 1 tbsp each dried onion, rosemary,fennel 1/2 tsp sea salt 1/4 tsp black pepper
1/4 cup Tahini C 1/4 cup water Juice of one small Tahitian lime 1 tbsp raw + local honey
Optional: Greens, pistachios, sliced olives, dried and sugar-free cranberries
Wash and cut your cauliflower into 4 steaks, about 2 inches thick. Blend melted ghee, oil, herbs, salt, and pepper and toss cauliflower steaks to coat evenly. Bake at 375 for 15-20 minutes, until fragrant.
Plate your steaks, drizzle Tahitian lime dressing over-top, top with pistachios + cranberries.
